How to make a variant selection required on checkout upsells
You can now require your customers to select a variant before adding it to the order using your checkout upsells

All you have to do is tick the option that says Require a selection when you use the manual upselling method on your checkout upsells

Note:
The placeholder's name (Size, Color, etc.) will depend on the first variant/option name from your product's admin. For the screenshots below, you'll see that the placeholder says ''Size'' because that's the first option on the product admin:
